Banana & Ginger Muffins

Yesterday I made these amazing Banana and Ginger muffins. A healthy recipe I found online and made my own. I recently started being more healthy and making better life choices - starting with fitness and food. After posting this out on Instagram I was asked to share the recipe which I couldn't refuse so here you go: 


  • 1 cup of self-raising flour 
  • 1 tablespoon of brown sugar - add more if you want it to be sweeter 
  • 1 teaspoon of baking powder 
  • 1/2 teaspoon of ground ginger 
  • 50g of butter - unsalted 
  • 4 tablespoons of skimmed milk 
  • 1/2 teaspoon of vanilla extract
  • 1 banana 

  1. Preheat oven to 400°F Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, sugar, baking powder and ginger. Cut butter into a few chunks and rub it into the flour mixture with your fingertips. This should create a bread crumb consistency. 
  3. Mix milk and vanilla in a small glass. Pour into the flour mixture and stir until the mixture starts to come together. Add the banana chunks (mash the banana before adding to the flour mixture) and continue to stir, adding more milk if necessary, until dough comes together.
  4. Pat dough into a disk about 1 inch thick. Cut into sections with a knife and place each on baking sheet.
  5. Bake at 400F for 17-20 minutes, until light gold.
I hope you found this useful! Next time I am going to swap out the ginger for cinnamon! Will let you know how they turn out.
